Fast Food Makeover: Healthy Cheesecake

We’re at it again: healthy ingredients that boast rich, indulgent taste. After our indulging in more than our fair share of junk food last weekend, thanks to St. Patty’s Day, I decided to try out this healthy cheesecake recipe for my housemate’s birthday. The recipe took a mere 10 minutes to whip up and tasted like heaven. What’s not to love about a rich, creamy, sweet dessert that’s just 60 calories a slice?

Cheesecake filling

• 1 ½ cups of vanilla greek yogurt

• ½ cup of silken tofu

• ¼ tsp salt

• 1 ½ tsp vanilla extract

• ½ tbsp of lemon juice

• 5 tbsp of maple syrup (or less if you prefer a less sweet cake)

• 2 tbsp sugar, or 1 package of stevia zero calorie sweetener

• 2 ½ tsp cornstarch

Homemade graham cracker crust

• 1 ½ cups of graham cracker crumbs

• 3 tbsp milk of choice

Directions

• Preheat oven to 350 degrees.

• Mix crumbs and milk in a bowl; press evenly into a greased pan.

• Place all remaining ingredients in a blender and blend until smooth.

• Pour evenly into crust-filled tin.

• Bake for 50 minutes; remove and cool in the fridge overnight.

Tip: For a little indulgence, drizzle with some maple syrup or honey and toasted pecans or almonds!
