Quick and healthy breakfast ideas

When you’re rushed to make it to an early class, breakfast is often the last thing on your mind. Luckily, these recipes don’t take long to whip up and can be made with everyday ingredients. They’re healthier than a bowl of sugary cereal but taste just as delicious. With these four healthy breakfast ideas, you’re day will be off to the right start.

Thumbprint breakfast cookie

I know what you’re thinking: cookies for breakfast? I was thinking the same thing before my roommate showed me this recipe. Not only are these cookies crazy good, they’re also really healthy. You can also mix it up and try adding some cocoa powder or raw peanut butter. Either way, these cookies are amazing. I promise you won’t feel so bad about eating the whole batch in one sitting.

Ingredients:

1 cup mashed banana (around 2 ripe bananas)

2 cups rolled oats

2 tbsp. ground flax or chia seed

1 tsp. cinnamon

1 pinch of salt

8 tsp. jam (strawberry is one of my favourites)

1. Preheat oven to 350° and line a baking sheet with parchment paper.

2. Grind up rolled oats until small and coarse. You can use a Magic Bullet or blender for this step.

3. In a bowl, mash your bananas and mix in the rest of the ingredients (except for the jam).

4. Scoop dough onto baking sheet in small to medium-sized balls and make a dent in each cookie with your thumb. Scoop a tsp. of jam to fill each dent.

5. Bake cookies for 11-13 minutes until firm on outside and soft in the middle.

Fruit smoothie

Smoothies win hands-down for easiest on-the-go breakfast. Whether you’re running to class or need a pre-gym energy boost, this smoothie will do the trick.

Ingredients:

½ cup almond milk

1 ripe banana

¼ cup frozen fruit (I use strawberries or peaches)

1 tbsp. flax seed or hemp seed

1. Blend all the ingredients together for a nice cold smoothie.

This drink is versatile as well, so feel free to change up the fruit and add natural peanut butter for added protein.

Berry parfait

This recipe is great if you need something more substantial before class. To keep it healthy, try looking for natural yogurt ― you can always add sweetness with some honey. Along with the previous recipes, it’s versatile, so you can adjust it to your liking.

Ingredients:

½ cup natural yogurt ½ cup mixed berries

¼ cup granola

1 tbsp. flax seed

1 drizzle of honey

1. Layer ingredients in a bowl for a delicious and nutritious breakfast.

Cheesy scrambled eggs

Scrambled eggs are the ultimate Saturday morning breakfast for me. To spice them up, I throw in a couple of extra ingredients. Spinach adds some green, goat cheese keeps them creamy and Frank’s gives a little kick.

Ingredients:

2 eggs

1 tbsp. milk or cream

¼ cup chopped up spinach

3 tbsp. goat cheese

Frank’s Red Hot Sauce

Salt and pepper

1. Whisk eggs and milk/cream together in a bowl.

2. In a pan on low heat, melt some butter and then pour in the eggs.

3. Start to scramble the eggs, then once it’s mostly cooked, add in spinach and goat cheese.

4. Let the cheese melt, then add salt and pepper to taste.

5. Top with some Frank’s and you’re good to go!
